Lamb Stew with Green Beans and Potatoes

Ingredients
- 600 g lamb meat (shank), cubed
- 4 tbsp oil
- 2 Garlic cloves
- 1 onion
- 1 l lamb stock or beef broth
- 500 g green beans
- 500 g firm potatoes
- Salt
- ground pepper
- 1 tbsp chopped bean herb
- 1 tbsp freshly chopped parsley

Season the meat with salt and pepper, then sear it in hot oil until browned all around. Peel and finely dice the garlic and onion, add them to the pot, and cook briefly before adding the stock; cover and simmer for about 40 minutes over moderate heat.

Wash, trim, and cut the green beans into roughly 3 cm pieces. Dice the potatoes into about 2 cm cubes. Add the vegetables to the meat, season with salt, pepper, and bean herb, then continue cooking covered for another 30 minutes. Taste before serving and sprinkle with parsley.
