Grilled Lamb Skewers

Ingredients

  • 800 g lamb meat (boneless leg cut)
  • 0.5 tsp Salt
  • Pepper
  • 1 tbsp Lemon Juice
  • 8 tbsp olive oil
  • 1 tsp Oregano
  • 200 g mixed salad greens
  • 2 Tomatoes
  • 125 g feta cheese
  • 12 black olives
  • Salt
  • Pepper
  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 1 tbsp oregano

Instructions

    Cut the meat into bite-sized pieces, removing any sinew and fat, and thread onto skewers.

    Whisk together salt, pepper, lemon juice, oregano, and olive oil. Place the meat skewers in a shallow dish, brush with the marinade, cover, and let marinate for 2–3 hours.

    Remove the skewers from the marinade, drain excess oil, and grill over high heat for 6–8 minutes on all sides.

    Quarter the tomatoes, remove seeds, and cut into bite-sized pieces. Wash, trim, and dry the salad greens; tear into smaller pieces. Peel the onion, halve it, and slice into rings. Crumble the feta cheese.

    Combine all salad ingredients in a bowl. Whisk together salt, pepper, vinegar, and olive oil, taste, pour over the vegetables, and mix well. Top with crumbled feta, sprinkle oregano, and serve with the grilled lamb skewers.
