Greek Lamb Skewers

Ingredients
- 1 small cucumber
- 4 cloves garlic
- 500 g yogurt
- 150 g quark
- 1 tsp Olive oil
- Salt
- 2 cloves garlic
- 1 onion (ca. 60 g)
- 500 g ground lamb
- 3 tbsp olive oil
- 1 tsp sweet paprika
- 0.5 tsp hot paprika
- Salt
- Pepper

Wash, peel, and grate the cucumber into a bowl using a kitchen grater. Squeeze out and discard the juice. Then peel the garlic cloves and press them through a garlic press. Whisk yogurt, quark, and olive oil together in a small bowl until creamy. Combine with the cucumber mixture, season with salt and pepper, and refrigerate until serving.

Peel and finely dice the remaining garlic cloves and onion, then add to the ground lamb. Add 1 tbsp olive oil, 1 tbsp water, paprika, salt, and pepper; mix thoroughly. With damp hands, spread the meat onto 16 wooden skewers and shape into rolls about 6 cm long each. Heat a pan with 2–3 tbsp olive oil and brown the lamb skewers all around for about 10 minutes.

Serve by placing tzatziki in small bowls and arranging four lamb skewers on each plate.
