Ingredients

  • 1 lamb shoulder
  • 2 onions (diced)
  • 2 tbsp clarified butter
  • 0.25 tsp saffron powder
  • 1 bay leaf
  • 2 tsp ginger powder
  • Salt
  • black pepper (ground)
  • 4 sprigs coriander
  • 200 g almonds (peeled)
  • 200 g dried figs

Instructions

    Trim the meat and cut into 4-5 cm pieces. Sauté onions in clarified butter, then add saffron, ginger, pepper, and salt, cooking briefly. Add lamb to brown, deglaze with 1/2 l water, bring to a boil, cover with bay leaf, figs, and almonds, and simmer over low heat for about 1.5 hours.
