Beef Sirloin Steaks with Potato Gratin and Beans

Ingredients
- 3 cloves garlic
- 3 spring onions
- 1 Carrot
- 0.5 celery
- 600 g waxy potatoes
- 20 g butter
- 3 eggs
- 200 ml heavy cream (at least 30% fat)
- 50 g crème fraîche
- Salt
- pepper (ground)
- 700 g beef sirloin
- 4 tbsp rapeseed oil
- 100 g dried plums
- 2 tbsp Tomato paste
- 100 ml red wine
- 700 ml meat broth
- 1 bay leaf
- 1 thyme sprig
- 1 rosemary sprig
- 200 g broad beans
- 1 tsp Cornstarch
- 20 g butter
- 1 tsp dried bean seasoning

Preheat the oven to 200°C (400°F) with top and bottom heat.

Peel the garlic and dice it. Wash the spring onions, dry them, and cut into 2 cm pieces.

Wash, peel, and dice the carrot and celery into 2 cm cubes.

For the gratin, wash and peel the potatoes, slice thinly. Butter a baking dish and arrange the potato slices in a brick-like pattern.

Whisk the eggs with cream and crème fraîche, season with salt and pepper.

Spread the egg mixture over the potatoes until covered, bake in the preheated oven for 20-25 minutes until golden brown.

Meanwhile, wash the beef sirloin, pat dry, and rub all sides with salt and pepper.

Heat 2 tbsp oil in a pan, sear the sirloin on all sides for about 2 minutes, then remove. Place on a small baking tray, put in the oven with the gratin, and cook for about 20 minutes until pink inside.

In the same pan heat the remaining oil, sauté the garlic cubes for 2 minutes. Add the dried plums, spring onions, vegetable cubes, and tomato paste; stir briefly. Deglaze with red wine, reduce for 2-4 minutes. Then add meat broth, herbs, salt, pepper, and simmer for 10-15 minutes over medium heat.

Wash the beans, trim ends, blanch in boiling salted water for about 2 minutes. Strain the pan juices. Mix cornstarch with 2-4 tbsp water and use to thicken the sauce.

Sauté the beans in a pan with melted butter, pepper, salt, and bean seasoning. Plate together with the gratin, sauce, and sliced steak on a warmed plate.
