Schnitzel with Zucchini Sauce

Ingredients
- 2 small zucchinis (total about 500 g)
- 2 Garlic cloves
- olive oil
- Salt
- ground pepper
- Cayenne pepper
- 120 ml heavy cream
- Lemon juice
- 0.5 bunch Basil
- 8 thin schnitzels (pork or veal, about 80 g each)
- spirals of lemon zest
Instructions

Wash and dice the zucchini. Peel and finely chop the garlic. Sauté both in 2 tbsp oil, cover and simmer over low heat for 7 minutes. Season with salt, pepper, and cayenne pepper.

Puree the zucchini with cream and 1 tbsp lemon juice until smooth, then taste again. Wash basil, shake dry, cut into strips, and fold in. Keep the sauce warm.

Wash schnitzels, pat dry, flatten, season with salt and pepper, drizzle a little lemon juice, and fry each side for 2-3 minutes in 2 tbsp oil.

Plate the schnitzels on preheated plates, pour over the zucchini sauce, and garnish with lemon zest and basil as desired.
