Lamb Skewers

Ingredients

  • 500 g lamb loin fillet (pre‑trimmed)
  • 12 sturdy sprigs of rosemary
  • 1 untreated lemon
  • 150 ml red wine
  • 4 tbsp olive oil
  • 2 tbsp liquid honey
  • 1 tsp ground cinnamon
  • Pepper (freshly ground)

Instructions

    Rinse the lamb, pat dry and cut into 12 finger‑shaped strips across the grain. Thread onto the rosemary sprigs (trim tips if desired) and place in a shallow dish.

    For the marinate, zest the lemon peel and squeeze its juice. Combine with red wine, olive oil, honey, cinnamon and pepper; whisk well. Pour over the lamb skewers, mix thoroughly, cover and refrigerate overnight.

    About 30 minutes before grilling remove from the marinade. Grill on a hot grill, turning regularly for about 8 minutes, basting occasionally with the remaining marinade. Just before serving season with salt.

    Serve with tabbouleh if desired.
