Season minced beef with salt and pepper. Form into 8 balls, flatten into patties (or use a burger press). In a hot pan with oil, cook each side for about 3 minutes, turning only once. Wash lettuce, pat dry, tear into small pieces. Slice buns horizontally and grill in a skillet until grill marks appear. Slice cheese into rounds or chunks. Assemble by layering lettuce, two patties, goat cheese, and caramelized onions on the bottom bun halves. Top with bun tops and serve.
