Lamb Ground Meat Skewers with Yogurt Dip

Ingredients

  • 80 g toast bread (crumbled)
  • 80 ml milk
  • 1 Shallot
  • 2 Garlic cloves
  • 1 tbsp plant oil
  • 2 red chili peppers
  • 500 g lean lamb mince (or beef mince)
  • 1 egg
  • 1 tsp chopped thyme
  • 1 tsp chopped rosemary
  • Salt
  • ground pepper
  • 300 g Yogurt (1.5% fat)
  • 2 tbsp chopped parsley
  • 1 tsp pressed garlic
  • 1 lemon (juice and zest)
  • Cayenne pepper

Instructions

    Soak the bread in milk. Peel the shallot and garlic, then finely dice them. In a hot pan with 1 tbsp oil, sauté both for 1-2 minutes, reduce heat and let cool briefly. Wash the chili peppers, halve, deseed, and finely dice as well. Mix the mince with the drained bread, egg, onion-garlic cubes, half of the diced chilies, and herbs; season with salt and pepper.

    Form small logs from the meat mixture, skewer them, and grill over high heat for 7-10 minutes, turning occasionally. Meanwhile, combine yogurt with remaining chili cubes, parsley, garlic, lemon juice and zest; season with salt and cayenne pepper. Serve in bowls alongside the lamb skewers.
