Lamb Skewers with Asparagus

Ingredients
- 1 Garlic clove
- 1 Shallot
- 1 handful parsley
- 2 sprigs oregano
- 800 g lamb mince
- 1 egg
- bread crumbs (as needed)
- Salt
- ground cumin
- freshly ground pepper
- 8 cinnamon sticks
- 750 g green asparagus
- 8 spring onions
- 1 red chili pepper
- 2 tbsp olive oil
- 12 shallots
- olive oil (for brushing)
- 1 tbsp green peppercorns (jarred)

Peel the garlic and shallot, finely chop both. Rinse parsley and oregano, shake dry, pluck leaves and finely chop. Mix lamb mince with garlic, shallot, herbs, and egg. Add bread crumbs if needed until dough is formable. Season with salt, cumin, and pepper.

Shape mixture into balls and thread onto cinnamon sticks. Press firmly, shaping slightly elongated.

Peel lower third of asparagus, trim woody ends if necessary. Wash and cut spring onions lengthwise or into thirds. Wash and clean chili pepper. Sauté asparagus in a hot pan with 2 tbsp olive oil for about 5 minutes. Add chili and spring onions briefly, season, pour a little water, cover and steam gently for about 10 minutes until tender.

Clean shallots and brush with oil. Brush skewers with oil and grill on a hot grill (or aluminum tray) for 6-8 minutes each side, avoiding direct heat over cinnamon sticks.

Add green peppercorns to asparagus mixture, taste, and serve arranged on skewers.
