Ingredients

  • 2 Lamb racks (about 400 g)
  • 2 Rosemary sprigs
  • Pepper (freshly ground)
  • 2 tbsp oil
  • 1 Garlic bulb
  • 400 g frozen green beans
  • 600 g small new potatoes
  • 50 g butter
  • 2 tbsp oil
  • parsley (for garnish)

Instructions

    Remove the skin from the meat and cleanly trim the ribs, then rub with pepper. Sear in hot oil with rosemary sprigs on all sides until crisp. Wrap with rosemary in foil and bake in a preheated oven at 100°C for about 30‑35 minutes.

    Wash the potatoes thoroughly, cut slightly smaller (do not peel) and boil in plenty of salted water for about 20‑30 minutes. Add thawed beans during the last 3‑5 minutes.

    Separate the garlic cloves, halve or quarter them, and heat fat in a pan; sauté the garlic while letting the butter brown lightly. Remove the racks from the oven and pour the pan juices over them. Drain the vegetables into a colander and mix with 2‑3 tbsp of the sauce. Slice the rack, plate with the vegetables and sauce, and garnish with parsley before serving.
