Salmon with Potato Salad

Ingredients
- 200 g Salmon fillet
- 3 tbsp Lime juice
- Salt
- pepper (ground)
- 1 tbsp oil
- 1 tbsp ajvar
- 0.5 tsp sambal oelek
- 2 tbsp Orange juice
- 1 tbsp lime juice
- 300 g sweet potatoes
- 300 g salad cucumber
- 1 tbsp Olive Oil
- 4 tbsp vegetable broth
- 6 tbsp lime juice
- 2 spring onions (rings)
- 1 tsp horseradish (jar).
- Cayenne pepper

Wash salmon fillet, pat dry, cut into 6 pieces crosswise, drizzle with lime juice, season with salt and pepper. Heat oil in a pan, fry the fish for about 4 minutes, turning once.

For the dip mix ajvar, sambal oelek, orange and lime juice, taste with salt. Plate salmon with the dip.

Peel potatoes and quarter lengthwise. Boil in salted water for about 20 minutes, drain and let cool. Wash cucumber, halve lengthwise, deseed and cut into ~4 cm strips.

For the salad sauce whisk olive oil, vegetable broth, lime juice, spring onions and horseradish. Season with salt and cayenne pepper. Toss potatoes and cucumber with the sauce.
