Ingredients

  • 200 g wheat flour
  • 50 g buckwheat flour
  • 7 g dry yeast
  • 0.125 l milk
  • 1 egg
  • Pinch Salt
  • 3 tbsp clarified butter (for frying)
  • 1 untreated lemon
  • 200 g Sour Cream
  • pepper (from grinder)
  • 150 g smoked salmon (thin slices)
  • dill sprigs

Instructions

    For the dough, combine the flours in a bowl and mix in the dry yeast. Add the milk, egg, and salt, then knead quickly. Cover the dough and let it rise at a warm place for about 1 hour.

    Preheat the oven to 80°C with upper and lower heat to keep warm.

    Heat a little clarified butter in a pan. Drop a tablespoon of dough into the pan and cook small pancakes until golden yellow on both sides, about 12 per batch. Keep them warm in the oven.

    For the topping, wash the lemon, dry rub it, quarter it, and slice. Spoon some sour cream onto each blini, sprinkle pepper, then top with smoked salmon slices and lemon pieces. Garnish with dill sprigs and serve arranged on a plate.
