Ingredients
- 125 g iceberg lettuce
- 2 Tomatoes
- 80 g smoked salmon (slices)
- 50 g cream cheese
- 2 tbsp heavy cream
- 1 Garlic clove
- 3 eggs
- 3 tbsp milk
- 3 tbsp Flour
- Salt
- pepper (ground)
- 1 tbsp butter
- chives sprigs
- herb blossoms (e.g., sage, borage...)
Instructions

Wash and dry the lettuce, then cut into thin strips.

Blanch the tomatoes, peel, core, and dice them.

Cut the salmon into pieces.

Whisk cream cheese with heavy cream until smooth, press in garlic, season with salt and pepper.

Beat eggs with milk and flour, season with salt and pepper, then cook two large omelettes in hot butter in a pan.

Place the omelettes on plates, spread a little cheese cream in the center, arrange lettuce, tomato, and salmon on top, roll them up like a parcel. Optionally tie each roll with a chive sprig and garnish with herb blossoms before serving.
