Konjac Noodles with Shrimp

Ingredients

  • 500 g Konjac Noodles (Low-Carb Noodles)
  • 250 g Shrimp (cooked, peeled and deveined)
  • 2 stalks coriander
  • 1 small red chili
  • 400 g Kenya Bean
  • 1 tbsp Coconut oil
  • Salt
  • Pepper
  • 2 tsp ground Turmeric
  • 2 pinches ground Cumin
  • 1 pinch cinnamon
  • 1 pinch paprika powder
  • 50 ml Passion Fruit Juice
  • 2 tbsp lemon juice
  • 150 ml Vegetable broth
  • 200 ml coconut milk

Instructions

    Place noodles in a bowl and pour over lukewarm water. Rinse the shrimp and pat dry. Wash coriander, shake dry and chop the leaves. Halve, deseed, wash and chop the chili. Clean, wash and cut the beans into bite-sized pieces.

    Heat oil in a pan. Sauté the shrimp over medium heat for 3 minutes. Season with salt, pepper, turmeric, cumin, cinnamon and paprika. Pour in passion fruit and lemon juice, broth and coconut milk, add chili and simmer for 4 minutes over medium heat.

    Meanwhile, cook the beans in boiling salted water for 2 minutes. Drain the noodles in a sieve, add them to the beans and simmer together for another 3 minutes over low heat. Then drain and let it drip off. Serve on plates, pour over the shrimp sauce and sprinkle with coriander.
