Kohlrabi salad with pea sprouts and sesame vinaigrette

Ingredients

  • 3 kohlrabi
  • Salt
  • 100 g pea sprouts
  • 1 tbsp sesame paste
  • 4 tbsp dark soy sauce
  • 2 tsp sugar
  • 2 tsp rice vinegar
  • 1 tbsp freshly chopped coriander
  • 1 tbsp freshly chopped parsley

Instructions

    Peel the kohlrabi, cut into thin sticks and blanch briefly in boiling salted water. Drain, shock with cold water, and let drain well.

    Rinse the pea sprouts under a sieve, pour boiling water over them, then shock with cold water and drain well. Mix with the kohlrabi.

    For the dressing whisk all ingredients with enough water to create a thick sauce. Toss the salad with the dressing, plate, and sprinkle with fresh herbs before serving.
