Ingredients
- 2 small carrots
- 2 tbsp grape seed oil
- 1 tbsp Olive Oil
- 1 lemon (juice)
- ½ tsp honey
- Salt
- 4 kohlrabi
- 1 Shallot
- 4 tbsp watercress
- 4 Cherry Tomatoes

Peel and finely grate the carrots. Whisk together the two oils, lemon juice, honey, salt, and 2 tbsp warm water in a bowl. Stir in the grated carrots and let the mixture rest.

Wash some nice kohlrabi leaves and set aside for garnish. Peel the kohlrabi bulbs and cut them into vegetable spirals with a spiralizer. Peel and finely chop the shallot. Mix it with the kohlrabi, fold in the dressing, and season the salad to taste.

Plate the kohlrabi salad with watercress and kohlrabi leaves, add one washed halved cherry tomato per serving, and serve.
