The Kohlrabi-Carrot Salad from Spoonsparrow is a crisp side dish that brings freshness and fiber to the table!

Ingredients

  • 1 kohlrabi (about 300 g)
  • 2 carrots (about 100 g each)
  • 1 handful parsley
  • 2 tbsp Sour cream
  • 1 tbsp Olive Oil
  • 1 tsp apple cider vinegar
  • 1 tsp Honey
  • Salt
  • Pepper

Instructions

    Peel, wash, and grate the kohlrabi and carrots. Wash the parsley, shake dry, pluck leaves, and finely chop.

    In a bowl mix the grated kohlrabi and carrots with sour cream, olive oil, apple cider vinegar, honey, and two-thirds of the chopped parsley. Season with salt and pepper. Arrange the salad on plates and garnish with the remaining parsley.
