Ingredients

  • 2 ripe kiwis
  • 300 g blackberries
  • 0.5 lemon (juice and grated zest)
  • fluid sweetener
  • 125 g ricotta
  • 100 g low-fat quark
  • 0.5 cup mineral water

Instructions

    Peel the kiwis and cut them into wedges. Wash, trim, and drain the blackberries.

    Blend kiwi wedges, about 2/3 of the blackberries, 1 tbsp lemon juice until smooth; sweeten with sweetener to taste.

    Whisk ricotta and quark with mineral water, remaining 1 tbsp lemon juice, and lemon zest until creamy; sweeten with sweetener to taste.

    For serving, spoon ricotta cream into two dessert bowls, place the fruit purée in the center, and garnish with extra blackberries.
