Ingredients
- 2 tbsp sunflower seeds
- 1 large apple (e.g., Granny Smith)
- 2 tsp lemon juice
- 200 g roasted beetroot (pre-cooked and vacuum-packed)
- 200 g ricotta
- Salt
- ground pepper
- 8 crackers

Roast the seeds in a dry pan until fragrant, then remove from heat and let cool.

Wash the apple, quarter it, remove the cores and set aside about half; brush the cut surface with lemon juice. Grate the beetroot and apple together on a coarse grater. Chop the seeds finely. Mix the vegetables and seeds with ricotta in a bowl and season with salt, pepper, and lemon juice.

Spread the spread onto crackers. Slice or shave the remaining apple into thin sticks, mix with the rest of the lemon juice, and arrange on the crackers.
