- 1 watermelon
- 80 g sugar
- juice of 1 lemon
- 200 g ricotta
- 250 g sour cream
- 0.5 tsp cinnamon
- fresh mint

Cut off a lid from the watermelon, separate the flesh from the rind while removing the seeds. Dice the flesh, mix with lemon juice and 40g sugar in a bowl, and refrigerate for 1 hour.

Whisk ricotta, sour cream, sugar, and 5 tbsp melon juice into a smooth mixture, then fold in the diced melon. Fill the watermelon cavity with the mixture and chill for 2 hours. Before serving, dust the ricotta cream with cinnamon and garnish with mint leaves.
