Ingredients
- 200 g Flour
- Salt
- 100 g cold butter
- 1 egg (size M)
- 400 g ricotta
- 2 Eggs (size M)
- 100 ml whipping cream
- 100 g grated cheese
- 60-80 g mixed finely chopped herbs (optional)
- salt, freshly ground pepper
Instructions

Knead flour, salt, butter pieces and egg into a shortcrust dough. Wrap in foil and refrigerate for 30 minutes.

Whisk ricotta with eggs, whipping cream, grated cheese and herbs. Season with salt and pepper.

Roll the dough between parchment paper and line a greased pie tin (26 cm diameter). Prick the dough several times with a fork. Spread the herb mixture over the dough.

Bake in a preheated oven at 200-220°C (gas: level 4-5, convection: 180-200°C) for about 40 minutes. Check after 30 minutes and cover with parchment if needed to prevent darkening.
