Kiwi and Melon Fruit Ice

  • 400 g kiwi
  • 100 g sugar
  • 1 lime (including juice and grated zest)
  • 1 Egg white

Instructions

    Peel the kiwis, set one aside and slice it thinly; puree the rest in a blender and strain through a sieve.

    Cook the sugar with 4 tbsp water until syrupy, then cool. Mix with the kiwi purée, lime juice and zest. Whip the egg white to stiff peaks and fold into the mixture. Freeze the fruit mass in a shallow metal pan in the freezer, stirring occasionally.

    Line the cups from the inside with some kiwi slices, then place them in the freezer. When the mixture is half frozen, fill the cups, insert the wood sticks and freeze for 2–3 hours.

    Puree the melon flesh in a blender and strain through a sieve.

    Cook the sugar with 4 tbsp water until syrupy, then cool. Mix with the melon purée, lime juice and sliced zest. Whip the egg white to stiff peaks and fold into the mixture. Freeze the fruit mass in a shallow metal pan in the freezer, stirring occasionally. When the mixture is half frozen, fill the cups, insert the wood sticks and freeze for 2–3 hours.
