Ingredients
- 1 kg sweet cherries
- 1 untreated lemon
- 1 vanilla pod
- 100 g sugar
- 400 ml red wine

Wash and pit the cherries. Cut off the lemon zest. Split the vanilla pod lengthwise. Bring the lemon zest, vanilla pod, sugar, and red wine to a boil.

Add the cherries and simmer for about 5 minutes. Rinse the canning jars hot.

Remove the lemon zest and vanilla pod and fill the compote into the jars. Let cool and store in a cool, dark place.
