Ingredients
- 100 g dark chocolate (85% cocoa content)
- 75 g butter
- 1 tbsp cocoa powder
- 2 Eggs
- 1 pinch salt
- 1 tbsp erythritol
- 250 g whipping cream
Instructions

Grate a few shavings of the chocolate for garnish and set aside; chop the rest and melt with the butter over a double boiler, then let cool. Stir in the cocoa powder carefully. Separate the eggs and beat the whites with a pinch of salt until stiff.

Beat the yolks with erythritol over a hot, non‑boiling water bath until very frothy. Fold in the chocolate, stir, and fold in the beaten egg whites. Whip 150 g of cream to stiff peaks and fold into the mixture.
