Avocado Strawberry Mousse

Ingredients
- 4 sheets gelatin
- 120 ml whipping cream
- 1 Avocado
- 1 untreated lime (zest and juice)
- 2 tbsp pistachio nuts
- 200 g strawberries
- 200 g Cream cheese
- 2 tbsp freshly chopped basil
- 80 g walnut kernels

Line 4 small cups (optional semi-round) with plastic wrap. Place a small garnish ring in the middle of each.

Soak gelatin in cold water. Whip the cream to stiff peaks. Peel, halve and pit the avocado; puree the flesh with 1 tbsp lime juice. Finely chop pistachios. Wash, trim and also puree strawberries. Mix cream cheese with zest and 1-2 tsp lime juice. Drain gelatin and melt it in a small pot; stir in 2 tbsp of the cream cheese mixture. Fold this into the remaining cream and take about one-third away. Stir strawberry purée into that portion and fold in about one-third of the whipped cream. Finally fold avocado purée, pistachios, remaining cream and basil into the rest. Fill the cups around the ring. Spoon strawberry mixture into the rings and then remove them. Refrigerate for at least 4 hours until set.

Finely chop nuts and brown them in a hot pan until golden. Remove and cool. Dump the mousse from the cups, discard plastic wrap, roll in nuts and serve on plates.
