Ingredients
- 1 melon (e.g., cantaloupe or charentais)
- 1 Lime (juice)
- 1 Orange (juice)
- 50 ml white port wine
- 2 tbsp powdered sugar
- 100 ml sparkling wine
- mint (for garnish)

Step 1: Cut the melon in half, remove seeds and use a melon baller to scoop about 100 g of fruit into balls. Peel the remaining flesh, cut it into coarse pieces and place in a bowl. Add lime and orange juice plus port wine.

Step 2: Add powdered sugar (adjust sweetness to taste).

Step 3: Pour sparkling wine over the mixture.

Step 4: Blend with an immersion blender until smooth.

Step 5: Continue blending until the soup is very fine; add more sparkling wine if desired.

Step 6: Drop the melon balls into the soup and chill for at least 2 hours before serving. Adjust seasoning with powdered sugar and lime juice.
