Almond Grape Soup

Ingredients

  • 3 slices of white bread (approx. 80 g)
  • 125 g raw almonds
  • 3 cloves garlic
  • 4 tbsp olive oil
  • 1 tbsp White Wine Vinegar
  • Salt
  • Pepper (freshly ground)
  • 60 g white grapes

Instructions

    Drain the white bread and soak it in water.

    Briefly rinse the almonds with boiling water, press out the shells, and pat them dry. Peel the garlic. Squeeze the soaked bread well and blend it with the garlic and almonds. Mix the puree in a bowl with olive oil and 750 ml water, then season heavily with vinegar, salt, and pepper. Cover and refrigerate for at least 1 hour.

    Before serving, peel, halve, and pit the grapes. Stir the soup, taste again, plate, and distribute the grapes within it.
