The Kefir cold bowl with sea buckthorn syrup and plums from Spoonsparrow provides a great start to the day.
Ingredients
- 12 yellow plums (or 2 kakis)
- 2 tbsp Lime juice
- 600 g kefir
- 250 g quark (20% fat in cream)
- 60 g sea buckthorn syrup (4 tbsp)
- 1 pinch cinnamon
- 1 tbsp honey
- 30 g Pistachios (2 tbsp)
- 2 stems of lemon balm
Instructions

Wash the plums, halve them, pit and cut into wedges. If using kakis, peel, wash and chop into small pieces. Mix half of the plum wedges with lime juice and set aside.

Stir kefir with quark. Add sea buckthorn syrup, cinnamon, honey, and the remaining plum wedges; blend everything with a hand blender until smooth.

Distribute the cold bowl onto shallow plates and top with the reserved plum wedges. Chop pistachios. Wash lemon balm, pat dry, and tear off leaves. Sprinkle pistachios over the bowls and garnish with lemon balm leaves.
