Coconut Milk Rice with Strawberry Ragout
Spoonsparrow and ORYZA present: Coconut milk rice with strawberry ragout – try it quickly!
Ingredients
- 1 l coconut drink
- Salt
- 250 g ORYZA (organic milk rice)
- 500 g strawberries
- 0.5 Vanilla pod
- 4 stems lemon balm
- 0.5 organic lemon (zest and juice)
- 2 tbsp agave syrup

Pour the coconut drink with a pinch of salt into a pot that holds at least 3 l. Add the ORYZA milk rice, bring to a boil while stirring occasionally. Reduce heat, cover, and simmer gently for 20 minutes on low heat. Stir once halfway through, then stir again after 20 minutes.

Meanwhile, clean, wash, and cut strawberries lengthwise into quarters. Split the vanilla pod lengthwise and scrape out the seeds with a knife. Wash lemon balm, shake dry, pluck off leaves, set aside some for garnish, chop the rest. Mix strawberries with vanilla seeds, lemon balm, grated zest, juice of half a lemon, and agave syrup.

Stir the milk rice again, divide into four bowls, arrange over the strawberry mixture, and sprinkle with lemon balm leaves before serving.
