Ingredients

  • 1 kg Kassler Kotelett (cured, smoked pork rib piece)
  • Salz
  • Pfeffer (freshly ground)
  • 3 zucchini
  • 400 g Tomaten
  • 500 g Kartoffeln
  • 300 ml Gemüsebrühe
  • 0.5 Bund frischer Thymian

Instructions

    Preheat the oven to 220°C with upper and lower heat. Rinse the meat and pat dry. Make a shallow cut in the fat edge, place it fat side down in the roasting pan, season with salt and pepper, put the pan on the lowest rack of the oven and roast for 40 minutes. Flip the piece and reduce the heat to 160°C upper and lower heat.

    Meanwhile wash the tomatoes, blanch them, peel and quarter. Wash and trim the zucchini, cut into bite-sized pieces. Peel, wash and quarter the potatoes. Rinse the thyme and pluck the leaves. Arrange the vegetables around the roast, pour in the vegetable broth, season with salt, pepper and thyme, and simmer for another 30-40 minutes until the vegetables are tender. Slice the Kassler and serve it with the vegetables.
