Ingredients

  • 4 Kassler ribs
  • salt water
  • 1 head of small white cabbage
  • 1 stalk celery (cut)
  • 3 large onions
  • 2 cloves garlic (finely chopped)
  • 6 tomatoes (peeled, diced)
  • 125 ml tomato juice
  • 2 bouillon cubes
  • mixed herbs
  • Salt
  • white pepper
  • flour (for dusting)
  • oil
  • 800 g potatoes (small, boiled, peeled)
  • Salt

  • ground caraway
  • 2 tbsp flour
  • 3 tbsp clarified butter

    Let the ribs soak in lightly simmering salt water for about 30 minutes.

    Sauté onions in oil, add sliced celery (without leaves), cover. Add chopped herbs and gradually add remaining ingredients and seasonings. Occasionally pour a little water; it should not become liquid. Stir several times and steam slowly until it has a soft consistency with a slight bite, taste and adjust seasoning. Dust potatoes with flour and fry them crisp in clarified butter all around, season with salt, pepper and caraway, arrange on plates with herbs and Kassler, and serve.
