Kale with Raisins

Kale with raisins from Spoonsparrow: This warm winter salad is suitable as a light main dish or the perfect side.
Ingredients
- 400 g kale
- Salt
- 150 g onions
- 1 Garlic clove
- 2 tbsp olive oil
- 50 g Pine nuts
- 60 g raisins
- 2 tbsp sherry vinegar
- 1 sprig rosemary
Instructions

Remove the stems from the kale, wash the leaves, tear into small pieces, shake off excess water and cook in boiling salted water for 3–4 minutes. Drain, rinse with cold water and let drain.

Heat oil in a pan. Sauté onion rings while stirring for 3 minutes over medium heat. Add garlic, raisins and pine nuts and continue sautéing for another 3 minutes. Deglaze with vinegar and simmer gently for about 5 minutes.

Meanwhile wash rosemary, shake dry and finely chop the needles. Add kale and rosemary to the pan and cook for an additional 5 minutes. Season kale with salt and pepper.
