Kale with Onions, Raisins and Feta

Ingredients
- 400 g fresh young kale
- Salt
- 120 g feta
- 2 shallots
- 2 tbsp olive oil
- 100 g pine nuts
- 150 g raisins
- 120 ml Vegetable broth
- 2 tbsp balsamic vinegar
- Pepper
Instructions

Wash, trim and dry the kale, then blanch in boiling salted water for 2–3 minutes. Drain, shock with cold water, let drain well and roughly chop.

Crush the feta. Peel and finely chop the shallots. Heat olive oil in a pan and sauté the shallots, pine nuts and raisins over medium heat until the shallots are translucent.

Deglaze with broth, stir in vinegar and simmer for 2–3 minutes over medium heat. Season with salt and pepper, remove from heat and let cool.

Mix the kale with feta, spread on plates and combine with the raisin mixture. Serve immediately.
