Cabbage Salad with Orange

The cabbage salad with orange from Spoonsparrow contains plenty of vital nutrients and keeps you winter-fit.

Ingredients

  • 3 organic oranges
  • 350 g young kale
  • 200 g red cabbage (1 piece)
  • 1 Red Onion
  • 2 tbsp Apple cider vinegar
  • 1 tbsp white balsamic vinegar
  • 1 tbsp honey
  • 4 tbsp Walnut oil
  • Salt
  • Pepper
  • 150 g walnuts

Instructions

    Wash the oranges, dry peel them; from one orange shave thin zest strips with a vegetable peeler and cut into very fine ribbons with a sharp knife. Fillet the oranges: cut off the skin with a knife and separate the segments in a wedge shape.

    Clean and wash the kale and red cabbage. Remove the thick stems of the kale and cut leaves into bite-sized pieces. Quarter the red cabbage, remove the core, and shred it finely. Peel the onion and slice into thin rings.

    Whisk both vinegars and honey in a large bowl, then vigorously whisk in the walnut oil and season the dressing with salt and pepper.

    Add the cabbage, onion rings, and orange segments to the dressing and mix well. Distribute the salad onto plates and sprinkle with orange zest strips and walnuts.
