Ingredients
- 4 eggs
- 4 tbsp granulated sugar
- a pinch of salt
- 1 tsp lemon juice
- 1 tsp grated lemon zest
- 150 ml milk
- 8 tbsp flour
- 2 tbsp butter
- 100 g raisins
- powdered sugar (for dusting)
- Lemon balm (for garnish)

Preheat oven to 100°C (fan 80°C; gas: level 1). Separate eggs. Beat egg whites with salt and lemon juice until stiff peaks form. Whisk yolks with half the sugar, grated lemon zest, and milk. Gradually stir flour into a bowl and then fold in the egg‑milk mixture. Fold in the beaten egg whites.

Melt half the butter in a pan, pour in half the batter, and cook over low heat for about 5 minutes. Use a plate to flip and then tear into small pieces. Add half of the raisins.

Transfer to a serving platter and keep warm in the oven. Repeat with the remaining batter. Dust Kaiserschmarrn with powdered sugar, arrange on plates, and garnish with lemon balm before serving.
