Seed Bun with Egg and Quark

The seed bun with egg and quark from Spoonsparrow is the perfect breakfast.

Ingredients

  • 4 eggs
  • 20 g mixed leafy salad (e.g., radicchio, arugula, frisée; 0.25 bunch)
  • 5 g chives (0.25 bunch)
  • 100 g low‑fat quark
  • Salt
  • Pepper
  • 4 pumpkin seed buns

Instructions

    Peel the eggs and place them in boiling water to cook for 9–10 minutes until hard boiled, then shock in cold water.

    Wash the salad leaves, dry by spinning, and tear into small pieces. Wash the chives, shake off excess moisture, and cut into thin ribbons.

    Mix the quark with the chives and season with salt and pepper. Peel the eggs and quarter them.

    Halve each bun. Spread the quark mixture on the bottom halves, top with salad and egg quarters, then place the bun tops back on.
