Ingredients
- 2 pumpkin seed rolls
- 20 g butter
- 4 salad leaves
- 150 g cooked turkey ham (sliced, with herb rim)
- 8 eggs
- 5 tbsp whipping cream (min 30% fat)
- Salt
- Pepper (freshly ground)
- 1 tbsp butter (for frying)

Slice the pumpkin seed rolls in half and spread a little butter on each half. Wash, dry, and shake off excess water from the salad leaves, then place them on the rolls. Top with turkey ham slices.

Beat the eggs with the whipping cream, salt, and pepper. Heat the butter in a non-stick pan and pour in the egg mixture. Let it set slightly, then stir. Cook over low heat for 2-4 minutes until softly scrambled. Plate the scrambled eggs with the rolls on plates and garnish with chives rolls.
