Pumpkin Waffles

Ingredients
- 125 g butter
- 75 g sugar
- 1 packet vanilla sugar
- 3 eggs
- 125 g flour
- 125 g cornstarch
- 2 tbsp baking powder
- 200 g liquid pumpkin puree
- fat (for the waffle iron)
- powdered sugar
- 500 g Hokkaido pumpkin flesh (pitted)

Wash and cube the pumpkin. Add a small amount of water to the pressure cooker and cook for about 6 minutes. Drain (reserve some pumpkin water) and blend into puree. If the puree is too thick, thin it with reserved pumpkin water until liquid.

Heat the waffle iron. Whisk butter, sugar, and vanilla sugar until frothy. Beat in eggs, flour, cornstarch, and baking powder. Stir in the pumpkin puree.

Brush the waffle iron surfaces with fat. Spoon about 3 tbsp of batter into each lower surface center. Bake each waffle for 2-3 minutes until golden brown. Let finished waffles cool slightly on a wire rack and dust with powdered sugar before serving.
