Juicy Cinnamon Stars

- 3 egg whites
- 1 pinch salt
- 250 g sugar
- 1 tbsp cinnamon
- 350 g almonds (unshelled, ground)
- 1 tsp quince jam

Beat the egg whites with a pinch of salt until stiff peaks form. Gradually add the sugar while continuing to beat until the mixture becomes a smooth, glossy foam. Set aside 3 tbsp for the glaze.

Fold in the remaining egg white mixture with cinnamon, almonds, and quince jam until well combined. Knead into a smooth dough, then roll between two sheets of parchment paper to about 5 mm thickness and cut out star shapes.

Brush each star lightly with the reserved glaze, place on a parchment-lined baking sheet, and let dry overnight at room temperature.

Preheat the oven to 130 °C (266 °F). Bake the stars for 20–25 minutes, then cool on a wire rack before storing in an airtight container.
