- 250 g powdered sugar
- 250 g ground almond kernels (unpeeled)
- 1 tsp cinnamon
- 3 egg whites (from small eggs)
- sugar (for rolling)

Stir the stiffly beaten egg whites into the sifted powdered sugar until a shiny creamy mixture forms. Separate 1/3 of the cream, mix the rest with almonds and cinnamon. Chill for 30 minutes. Roll the almond mixture out in portions on sugar, up to 1 cm thick.

Cut stars (4.5 cm diameter) using a cutter dipped in sugar multiple times. Line a baking sheet with parchment paper, place the stars on it, brush them with the remaining egg white cream. Pull the mixture from the center to the tips with a knife. Let rest until the edges of the stars are dry, then bake for 20 minutes at 150°C.
