Original Cinnamon Stars

Ingredients
- 3 egg whites
- Pinch of salt
- 200 g powdered sugar from birch sugar (or erythritol)
- 450 g ground almonds
- 1 tsp cinnamon
- pinch of ground cloves
- 1 tbsp lingonberry jam

Beat the egg whites with salt until stiff. Gradually fold in the powdered sugar, continuing to beat until the mixture shines. Reserve 5 tbsp for glazing. Mix almonds, spices and lingonberry jam together. Fold into the egg white mixture to form a well‑mouldable dough.

Line baking trays with parchment paper. Roll out the dough to about 5 mm thickness, cut out star shapes and place on the tray. Using a small sharp knife, spread the reserved egg white glaze precisely over each star. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 15–20 minutes, keeping the surface bright white. Remove from the tray and let cool.
