Ingredients
- 500 g ground almonds
- 5 egg whites
- 450 g powdered sugar
- 2 tsp Cinnamon
- 20 ml cherry brandy
- sugar (for dusting work surface)

Beat egg whites until stiff, fold in powdered sugar.

Set aside one cup of the meringue for glazing.

Add almonds, cinnamon and cherry brandy to the remaining meringue, quickly knead, cover and refrigerate for about 1 hour.

Dust a work surface with sugar, roll dough to ~4 mm thickness, cut out star shapes, coat evenly with glaze, place on parchment-lined tray and let dry overnight at room temperature.

Bake ginger stars in preheated oven at 160°C for about 8 minutes; they should remain soft inside while the surface stays white.
