Juicy Apple Cake Without Crust

Refined and healthy at the same time: This juicy apple cake comes without a crust and with little sugar! Instead, honey refines this treat!

Ingredients

  • 250 g flour
  • 1 tsp Baking powder
  • 50 g liquid honey
  • 50 g sugar
  • 2 egg yolks
  • 1 egg
  • 160 g cold butter
  • butter (for the pan)
  • flour (for the work surface)
  • 1 kg apples
  • 3 tbsp Lemon juice
  • 80 g liquid honey
  • 1 tsp cinnamon
  • 1 packet vanilla sugar
  • 1 packet vanilla pudding powder

Instructions

    Mix flour with baking powder, place on a work surface and press a well in the center. Add honey, sugar, 1 egg yolk and the whole egg. Distribute butter pieces around the edge of the flour and quickly knead into a smooth dough. Wrap in cling film and chill for about 30 minutes. Divide the dough in half and roll each half into circles slightly larger than the pie tin. Line the greased and floured tin with one circle. Cut the second dough circle into narrow strips.

    Preheat the oven to 180°C (fan).

    Quarter the apples, peel them and remove the cores. Slice the quarters into thin pieces and mix with lemon juice. Add honey, cinnamon, vanilla sugar and vanilla pudding powder and combine well. Spread the apple mixture evenly over the base and lay the dough strips in a lattice pattern on top, pressing the ends to the edge. Brush the strips with remaining egg yolk. Bake in the preheated oven for about 45 minutes. Remove from the oven, let cool in the tin. Then lift out or flip onto a plate using a dish. Serve warm or cold.
