Apple Cake with Walnuts and Raisins

- 225 g flour
- 1 tsp Baking powder
- 50 g liquid honey
- 50 g sugar
- 2 egg yolks
- 1 egg
- 150 g cold butter
- butter (for the pan)
- flour (for the work surface)
- 1 kg apples
- 3 tbsp Lemon juice
- 4 tbsp Honey
- 0.5 tsp cinnamon
- 1 packet vanilla sugar
- 1 pack vanilla pudding powder
- 60 g walnuts (coarsely chopped)
- 50 g Raisins

Mix flour with baking powder, place on a work surface and press a well in the center. Add honey, sugar, egg yolks and egg. Distribute butter pieces along the edge of the flour and quickly knead into a smooth dough. Wrap in cling film and chill for about 30 minutes. Then divide the dough in half and roll each half into circles slightly larger than the pie tin. Line the greased and floured tin with one circle, then place the second circle on top.

Quarter the apples, peel them and remove the cores. Slice the quarters into thin slices. Toss with lemon juice. Add honey, cinnamon, vanilla sugar, vanilla pudding powder, raisins and walnuts; mix well. Spread evenly over the base and place the dough lid on top. Press the edges with a fork onto the overlapping dough of the base.

Pierce the lid several times with a fork. Bake in a preheated oven at 180°C fan for about 50 minutes. Remove from the oven and let cool in the tin.
