Apple Pie

Ingredients
- 150 g butter
- 350 g flour
- Salt
- 70 ml cold water
- 6 sweet apples
- Lemon juice
- 4 dried apricots
- 1 pinch cinnamon
- Ginger powder
- 1 packet vanilla sugar
- 1 untreated lemon and orange each
- 5 tbsp sugar
- 1 egg
- butter (for the pan)
Instructions

Quickly knead flour, butter, cold water and a little salt into dough, shape it into a ball, wrap in foil and chill for 30 minutes.

Peel, quarter, core and grate the apples. Drizzle immediately with lemon juice. Soak apricots briefly in hot water, drain well and cut into small pieces. Mix with cinnamon, ginger powder, vanilla sugar and grated lemon and orange zest. Grease the pie tin thoroughly. Pour half of the dough into it and lift up the edges. Roll out the remaining dough and cut into equal-width strips. Spread the apple mixture on the base, then the apricot mixture on top. Beat the egg. Arrange the strips as a lattice over the apricot mixture and brush with beaten egg. Preheat oven to 180°C and bake the pie for about 40 minutes. Sprinkle with sugar before serving.
