Apple Pie

Ingredients
- 250 g flour
- 125 cold butter
- 2 tbsp sugar
- 1 pinch salt
- 750 g tart apples
- 1 untreated lemon
- 1 tsp ground cinnamon
- 3 tbsp sugar
- 1 tbsp Cornstarch
- sugar (for sprinkling)

Knead the flour with butter pieces, sugar and salt; add 3 tbsp cold water and work into a shortcrust dough. Wrap in foil and chill for 1 hour.

Wash the apples, quarter them, peel, remove cores, slice thinly and drizzle with lemon juice. Grate the peel and mix it in. Toss apple slices with sugar, cinnamon and cornstarch. Preheat oven to 200°C. Divide dough into a slightly larger and a smaller portion; roll each out round.

Place the larger dough piece in the pan, form a high edge, poke several times with a fork, fill with apple mixture and loosely cover with the second dough sheet. Press edges together firmly. Cut a hole in the center. Bake the pie for 45 minutes, sprinkle with sugar while hot, and serve warm.
