Jamaican-Style Stuffed Pastries

Ingredients
- 225 g flour
- 1 tsp turmeric powder
- 0.5 tsp Salt
- 50 g pork lard
- 40 g Butter
- 1.5 tbsp sunflower oil
- 0.5 small onion
- 0.25 chili (Habanero)
- 100 g ground meat
- 25 g breadcrumbs
- 0.5 tsp thyme (finely chopped)
- 1 tsp mild curry paste
- 2 beef tomatoes
- Salt
- ground pepper

Add all dough ingredients to a food processor with a blade and pulse into crumbs. Transfer crumbs onto the work surface, press together into a ball. If the dough is too crumbly, knead in a little water. Wrap in plastic wrap and chill for 30 minutes.

For the filling, peel and dice the onion finely. Remove seeds and membranes from the chili and chop very finely. Wash the tomatoes, remove stems, and dice them small. Heat oil in a pan and brown the meat until crumbly; add onions and chili, stir in curry paste, tomato cubes, and thyme. Simmer for 5 minutes. Mix in breadcrumbs, season with salt and pepper.

Take dough from fridge, divide into eight portions, shape each into a ball. Roll each ball into about a 12 cm circle. Spoon filling onto the center of each circle. Fold each circle over the filling, pinch edges together with a fork to seal. Place on a parchment-lined baking sheet with space between them and bake at 200°C for about 30 minutes until golden brown.
