Avocado Tomato Sandwich

Avocado tomato sandwich from Spoonsparrow tastes great for dinner too!

Ingredients

  • 1 ciabatta loaf
  • 1 ripe Avocado
  • 3 tomatoes
  • 6 mixed salad leaves (as desired, washed and dried)
  • Salt
  • freshly ground pepper
  • 125 g mozzarella
  • 2 sun‑dried tomatoes
  • 2 Garlic cloves
  • 2 tbsp finely chopped basil
  • olive oil

Instructions

    Slice the bread lengthwise. Peel, pit, and slice the avocado thinly. Drain the mozzarella and cut into thin slices. Wash the tomatoes and slice them.

    Finely chop the sun‑dried tomatoes and mix with 10 tbsp olive oil; peel and press the garlic cloves into the mixture. Stir in basil and season with salt and pepper.

    Drizzle the aromatic oil over both halves of the bread. Layer with salad leaves, avocado, mozzarella, and tomato slices. Season generously with salt and pepper. Drizzle the remaining oil over the filling. Cut the sandwich once more and serve immediately.
