Crispy Bread

- 0.5 cube fresh yeast (21 g)
- 1 pinch sugar
- 500 g wheat flour
- 1 tsp salt
- 2 tbsp sunflower oil
- flour for working

For the pre-ferment mix the yeast with 2 tbsp lukewarm water and the sugar, then add enough flour until a soft dough forms. Cover and let rise in a warm place for about 20 minutes (the pre-ferment should show cracks on the surface).

Add the remaining flour with about 220 ml lukewarm water, salt, oil, and knead with the pre-ferment. Cover and let rise for another ~40 minutes.

Knead the dough again well and shape it into a long loaf. Make several shallow diagonal slashes and place on a baking sheet lined with parchment paper. Cover and let rise for about 20 more minutes.

Preheat the oven to 200°C fan (convection). Place a heat‑proof dish of water in the oven.

Brush the dough with water and bake in the oven for ~45 minutes until golden brown and crispy.

Remove the finished loaf from the oven, allow it to cool, and serve.
